Pan Divino is an Italian restaurant in Surry Hills, guided by Head Chef Adam Bryce’s ‘less is more’ philosophy and a deep respect for traditional Italian cooking. Earthy elements such as flame, smoke and salt are used to shape dishes that feel honest, restrained and memorable.
With a strong focus on seafood, the seasonal menu showcases ingredient-led plates including the signature salted blue-eye trevalla, cured and dry-aged in-house, alongside handmade pasta and wood-fired dishes designed to be shared.

Pan Divino offers a thoughtfully curated wine list of over 50 bottles, showcasing both Italy’s most respected regions and select Australian producers. Working closely with small-batch importers, the list highlights regional diversity and distinctive wines chosen to complement the seasonal menu.
At the bar, classic cocktails sit alongside house signatures, including the Martini Divino — a blend of Vermouth Bianco with lime peel, pineapple and pandan — designed for an aperitivo in the courtyard or a pre-dinner drink.

Our Head Chef, Adam Bryce
Pan Divino is led by Head Chef Adam Bryce, whose culinary career spans over 15 years and is shaped by a deep connection to Italian cooking and seafood. Beginning his apprenticeship on Crown Street, Adam refined his approach at Jamie Oliver’s Italian and Otto before moving into seafood-driven kitchens.
His passion for produce-led cooking led him to North Bondi Fish, where he became Head Chef, followed by leading the kitchen at the iconic Doyle’s Seafood Restaurant. At Pan Divino, Adam brings together Italian flavours, refined technique and a strong seafood focus, shaping a menu that is expressive, seasonal and grounded in quality produce.
